Recipes for personal or family-sized meals

I'm single and looking for a place to share single-serving recipes, or family-sized for those who need to cook for others or for individuals who want left overs. I figure we could post the recipe as well as the nutrition value to make it easier to peruse. So yeah, let's see how this goes.

  • Deli-style Turkey 1/2 Sandwich

    Recipe:
    Whole Wheat Bread, 1 slice
    Provolone Cheese (Non Smoked), 1 slice
    Advacado, 1/4 Medium sized
    Honey Smoked Turkey Breast, 1.5 oz
    Dole - All Natural Spring Mix, 0.25 oz

    Calories: 266 Carbs: 17 Fat: 15 Protein: 17 Sodium: 758 Sugar: 3

    I'll usually have this for lunch. It's absolutely delicious and filling, without a lot of calories :D
  • Mediterranean Salad- Serves 1

    Recipe:
    Roasted Sunflower Seeds 1/8 cup
    Tomato 0.5 medium
    Cucumber 0.3 cup slices
    Dole - All Natural Spring Mix, 3 oz ( cups)
    Newman's Own - Olive Oil & Vinegar, 1.5 tbs
    Nikos - Mediterranean Crumbled Feta Cheese, 1 oz

    Calories: 318- Carbs: 13- Fat: 25- Protein: 12- Sodium: 550- Sugar: 4

    This is a meal I have for lunch almost every day
