Looking for Quiche

I've got a hankering for Quiche lately and wondering if anyone has a good "healthy-ier" recipe or good store bought one (Canada so mainly Sobeys, Superstore, or WalMart). I'm also hoping I can use it as a way to get my fussy toddler to eat spinach. Thanks

    I make a very simple crustless quiche as listed below. Even my husband likes it! You can switch out your veggies to use spinach instead of broccoli, bacon instead of ham, etc. Hope it helps!

    Number of servings - 4

    Egg - Large, Grade A, Raw, 2 egg

    Walmart Great Value - Original Liquid Eggs, 7.5 tablespoons

    Aldi - Lunch Mate - Finely Sliced Honey Ham - Water Added - 97% Fat Free, 1 slice (28 g)

    Canned Veggies~Jen's - Aldi Happy Harvest Mushrooms Stems & Pieces, 1/2 cup

    Generic - Broccoli - Steamed, 1 cup

    Happy Farms - Sharp Cheddar Cheese- Block, 3 oz; shredded

    Generic - Milk-2%, 1/4 cup

    I steam the broccoli and then saute the broccoli, ham, and mushrroms in a pan. Beat the eggs and egg whites with the milk and mix in the cheese. Put the broccoli, ham mixture in the bottom of a pie plate and pour the egg/cheese mixture over the top. Bake at 350 degrees until the egg is cooked and set - should be a little brown on top.

    Per Serving (makes four generous servings) 166 calories
    7 grams carbs
    10 grams fat
    16 grams protein

    Also good warmed in the microwave for breakfast the next morning. Enjoy!

    I make mine in a store-bought deep-dish pie crust.

    6 eggs, beaten
    1-2 tomatoes, diced
    half an onion, diced
    small can sliced black olives, drained
    2-4 handsful spinach or beet greens, slightly wilted
    roughly half a cup strong, sharp cheese, grated
    a little crumbled bacon or diced ham (optional, but delicious)

    Whisk everything together thoroughly, pour it in the crust, bake at 350F until the center is just set (usually about 45 minutes). I haven't made it since I started MFP, so I'm not sure whether it qualifies as low-calorie... but if so, it's certainly customizable!

    I made a delicious one the other day..

    Store bought Pillsbury crust
    1.25oz extra sharp cheddar (you can probably save some calories and use 2% one)
    4 eggs
    4oz of diced ham
    0.75 cup of milk (can save calories by using skim or low fat too)
    85g of broccoli

    Total is about 330-350 calories for a quarter of it, depending on the cheese and milk.

    My second one had Swiss cheese, ham and onions, but it wasn't as good. Proportions were about the same though. I'll have to try again with cheddar instead.

    I've done crustless feta and spinach and it was ok too, but I had mostly used egg whites and it's just not the same (and I love crusts). Just make sure you cook the spinach in a pan so there is no water left in them, even if they were frozen.

    For what it's worth, my kids wouldn't touch them. More for us...

    Search Cookinglight "Garden Vegetable Crustless Quiche". Turns out perfect every time and is delicious!
