Baked ricotta

Has anyone made baked ricotta? I just tried for the first time and wasn't happy with the outcome - bought baked ricotta is always very firm in texture and this was sloppy. I mixed an egg through 250g ricotta, added 1/3 cup of parmesan and herbs for flavour and baked at 180C for 25 mins. Any tips to improve? I really wanted the firm textured version.

    Olive oil, to grease
    500g fresh ricotta
    2 eggs, lightly whisked
    1/2 cup finely chopped fresh chives
    1 tsp chilli flakes
    Salt & freshly ground black pepper
    Baguette chips (recipe follows), to serve

    Method

    Step 1
    Preheat oven to 180°C. Brush two 250ml (1-cup) capacity ramekins with oil to lightly grease.
    Step 2
    Combine ricotta, egg, chives and chilli in a bowl. Season with salt and pepper. Spoon ricotta mixture among ramekins and smooth the surface. Place on a baking tray. Bake in oven for 30 minutes or until golden and set. Set aside for 30 minutes to cool. Turn onto a cheese board. Serve with baguette chips.


    from taste.com. I've never made it but reading the recipe I believe it would matter if you only put it into one dish, you would need to adjust for this and allow a longer cooking time. Other than that, I am of no help to you whatsoever ever :))
