Chocolate Date Cake

I mentioned this in another thread and lots of people seemed to think it was gross, but I figure some people out there have to interested in a delicious cake that's packed with nutrients. I found the recpie on Dr. Oz's website and made it for my husband's birthday. I loved it.

Cake
1 2/3 cups whole-wheat pastry flour
1 tsp baking powder
3 tsp baking soda
3 1/2 cups pitted dates, divided
1 cup pineapple chunks in own juice, drained
1 banana
1 cup unsweetened applesauce
1 cup raw beets, shredded
3/4 cup raw carrots, shredded
1/2 cup raw zucchini, shredded
3 tbsp natural, nonalkalized cocoa powder
1/2 cup currants
1 cup chopped walnuts
1 1/2 cups water
2 tsp vanilla extract

Chocolate Nut Icing
1 cup raw macademia nuts and/or raw cashews
1 cup vanilla soy, hemp or almond milk
2/3 cup pitted dates
1/3 cup brazil nuts or hazelnuts
2 tbsp cocoa powder
1 tsp vanilla extract

Directions
Preheat oven to 350°F. Mix flour, baking powder and baking soda in a small bowl. Set aside.

In blender or food processor, purée 3 cups of the dates, pineapple, banana and applesauce. Slice remaining 1/2 cup dates into 1/4-inch pieces.

In large bowl, mix sliced dates, beets, carrots, zucchini, cocoa powder, currants, walnuts, water, vanilla and flour mixture. Add the blended mixture and mix well.
Spread in a 9 x 13-inch nonstick baking pan.

Bake for 1 hour or until a toothpick inserted into the center comes out clean.

For the icing, use a high-powered blender and combine all icing ingredients until smooth and creamy. Spread on cooled cake.

    That's exactly what it's like! You get all the wonderful nutrition and vitamins that your body needs, but also can satisfy that pesky sweet tooth. I put a little organic ice cream on top or some fresh homemade whipped cream with fresh berries and just go to town. It's great!

    I'm glad someone around here gets it.

    That's TWENTY ONE ingredients. Are you crazy, woman?!

    Let me simplify that for you. I'm a big fan of the 3 ingredient craze.

    Cake and beets should not ever be in the same sentence...

    Actually, legit red velvet cake (AKA delicious) is supposed to get its red color from beets, so it's not an unheard of thing and isn't as bad as it sounds :).

    I don't appreciate all of you people trying to hijack my post. If you don't like it just move along. Some people are interested and don't mind a little extra work to avoid the chemicals and processing that come with gross boxed cake.

    According to the link (I haven't added this to my recipe maker) it's 430 calories per slice, assuming 12 slices (Those nut calories add up fast) but the cake is fairly dense so a 1/2 slice would be very satisfying if calories are a huge concern. Or the nuts could be omitted in favor of something lighter.

    the recipe is great! It's healthy and different. I rather try it than to open a box of crap from DUNCAN HINES.

While I did enjoy it (my husband did not) it seems to perhaps it wasn't as appealing to the 'masses' as I expected.

    I had to spend some times thinking over some things these past few days but I do want to thank everyone for giving me a little perspective and letting me see that maybe I was more 'unreasonable' about some things than I thought. That's right, this little cake post did all that. Enlightenment comes in the strangest of places.

    Should you make this into 12 pieces (whole cake with frosting) here is the nutritionnal info:

    Calories: 434.4
    total fat: 14.4 g
    Cholesterol: 0
    Sodium: 401 mg
    Carbs: 78.5
    Fiber: 9.3 g
    Protein: 8 g

    It is very nutritional so you have to weigh the pros and cons.....

    I can't really agree. I think that like you said before- if you don't like it, keep it moving. No need for people to say stupid ish. Everyone has different taste and everyone is not going to like everything. It would be a waste of my own time to post a comment about every recipe I didn't like, or disagreed with- esp if no one asked. But I guess people don't mind wasting their own time.

    OMgosh. I just saw this post on my friends' wall and remember seeing it when it was posted last year. For some reason, until now, I thought this post was about a chocolate cake that someone was making for a date. Makes much more sense now. I guess I should have read the first post with the recipe instead of skipping straight to the other posts, which threw me off...
