Baked Ricotta Pancakes

Hey guys!
Thought I would share a pancake recipe for everybody that has a tough time getting in some protein or lower their carbs just like me. You could also substitute the sugar and AP flour.
They taste like normal pancakes and you can cook them either on a griddle or bake them in the oven
2 servings (that's why the measurements are all funny)
- 1 egg, seperated
- 4 tsp granulated sugar
- 1 tsp vanilla extract (OR lemon extract and 1 tsp lemon rind)
- 1/3 cup + 1/4 cup skimmed milk
- 2 tbsp + 2 tsp light Ricotta cheese
- 1/4 tsp kosher salt
- 1/3 cup + 2 tbsp AP flour
- 1/4 tsp baking powder
1. Preheat oven to 400°F/205°C
2. In a small bowl froth the egg white until soft peaks form.
3. In a medium bowl mix together egg yolk, sugar, vanilla extract, milk, salt and Ricotta cheese.
4. Add flour and baking powder.
5. Fold under the egg white.
6. Pour into an 8" round baking pan.
7. Bake for 20-25min

I like to top them off with either honey or homemade natural jogurt and fresh fruit.
