as I am typing this I am eating quinoa w/ taco seasoning, corn and black beans w/ my tilapia. also last week I made it for breakfast for the first time. I cooked it w/ almond milk and then added a little cinnamon, vanilla, tablespoon of almond butter and a little more almond milk put it in the fridge and grabbed and go in the morning. I ate it cold, it was actually really good.0

Boil quinoa in veg stock until cooked. Make quick lemon and honey dressing (tsp honey, oil and lemon to taste) and stir tgrough with fresh spinach leaves. Add shredded grilled halloumi for saltiness and texture. Nom!0

Yum yum I love quinoa and halumi cheese, two of my fav foods. Google quinoa there are so many dishes out there to make, you can't go wrong with it. Message me if you want a couple that I've tried......... again and again0

First this:
Quinoa Tabouli
Tabouli, a mid-eastern salad normally made with bulgur wheat, makes light, refreshing, warm weather fare. Try it with quinoa for a delightful new taste.
1 cup quinoa (if not pre-washed, you must wash it)
1 cup parsley, chopped
1/2 cup scallions, chopped
2 tbsp fresh mint
1/2 cup lemon juice
1/4 cup olive oil
2 garlic cloves, minced
1/4 cup olives, sliced
lettuce leaves, whole
Simmer quinoa in an equal volume of water for 12-15 minutes. Allow to cool.
Place all ingredients except lettuce and olives in a mixing bowl and toss together lightly. Chill for an hour or more to allow flavours to blend.
Wash and dry lettuce leaves and use them to line a salad bowl. Add tabouli and garnish with olives.
Serves 4.0 -
Then this:
Curry quinoa, lentils, and rice
2/3 cup red or ivory quinoa
2/3 cup black or brown rice
1/3 cup lentils (any type that is whole with skin)
1/2 cup raisins (optional)
1/4 cup shredded, unsweetened coconut (optional)
1 tbsp curry powder, or any set of fragrant spices (cumin, coriander,turmeric, cayenne, etc)
1 bay leaf
1 to 3 dried chilies
1 tsp salt
1 tbsp olive oil
3 cups water
Pick over the lentils to avoid stones. I buy pre-washed organic quinoa, but otherwise it will need to be washed according to the directions on the package. If you do pre-wash everything, reduce the water by 1/2 cup. Put everything in a rice cooker, and let it cook on regular.
If using the stove top, put everything into a small heavy bottom and bring to a boil with the lid on, then turn it down to a low simmer and cook covered for 35-40mins.
Remove bay leaf and chili, and fluff with a fork before serving.
You can use vegetable or chicken stock if you like, just watch the salt. This goes great with almost anything, or just by itself with diced tomatoes and/or avocado.0 -
Quinoa and Black Bean Salad
2 cups quinoa (recommend no-rinse variety)
1 ¾ cups water
1 red bell pepper, diced small
¼ cup thinly sliced spring red onion or scallions
5 radishes, sliced paper thin using a mandoline
1½ cups fresh corn (from about 2 ears)
½ cup chopped cilantro
1 can black beans, drained and rinsed
Juice of 2 limes
2 tablespoons extra-virgin olive oil
¼ teaspoon salt
1 teaspoon Aleppo pepper flakes (optional but great!)
Combine the quinoa and water in a saucepan. Bring to a boil, then reduce the heat and simmer for about 12 to15 minutes, until you see the little white spiral “tail” appear on each kernel. The quinoa should be just tender, but still with a little crunch. Drain off any excess liquid. Cool.
Blanch the corn kernels in boiling water for one minute. Drain.
Combine the quinoa with all ingredients. Adjust salt and lime juice to taste, and serve. Can be served chilled or at room temperature.0 -

I tried this soup tonight (I was going to post earlier, but hadn't tasted the finished product so thought I should wait). In anycase...it was SO good. I altered the recipe a bit...added half a diced onion, upped the cumin, and left out the hard boiled egg, but I was impressed to say the least. Oh...I used chicken stock instead of water too.

I mix diced tomato and cucumber with feta cheese and sundried tomato dressing with quinoa. almost like a greek salad, but I hate olives. lol delicious!!!0

I made a half batch of this apple cinnamon quinoa bake yesterday. My sister and I polished off the whole lot in a single afternoon. Oops!

When I made it, I used unsweetened almond milk and almost doubled the amount of raisins because I love 'em I'll definitely be making it again, although I might try experimenting with different fruit. I'm thinking pears could be nice ... maybe dried apricots ... lots of possibilities!0 -
I made the herb quinoa last night. Holy cow, it was waaaay too lemony. I'm going to leave out the lemon zest next time. Other than that, it tasted great with the chicken I made. The whole meal I ate was under 200 calories so I'm pretty excited about that.0

I actually like quinoa for breakfast... a little brown sugar and a little butter... YUM! I also eat it with a can of Rotel diced tomatoes and chiles. Super simple, but tasty lunch.0

I also like it for breakfast instead of oats.0 -
If you have a rice cooker (get a cheap one, mine was $20 on amazon), making quinoa is easy and awesome! I put in:
1 cup quinoa
2 cups broth (chicken, beef, veg, low sodium, whatever you like)
That's it, let the rice cooker take its 20 minutes to get it to the perfect level of doneness. While that's happening, you can basically throw in any veggies you have laying around to make it into a salad. 2 of my favorites are:
1.
Black beans, roasted diced tomatoes, cilantro, onion, and the juice from 1 lime
2.
Zucchini , mini sweet peppers, roma tomato, capers, and garlic salt.
I just make up a batch, figure out what macro/micro nutrients I'm low on for the day, and add foods in that will help me meet my goals. Like a delicious multi-vitamin!0
