I'm definitely making breakfast for dinner tonight. I'd love to hear some extra delicious suggestions and/or personal favorites!

    Just had a slice of toast, fried egg, and grits last night. Complete with coffee. Sometimes it just strikes me as quick, easy, and delicious.

    Cuz regular recipes make my sugar crash & burn bad....I use Maple Groves Vermont Sugar Free Pancake & Waffle Mix. Add a 34g scoop of Trutein Cinnabon protein powder, a dash of cinnamon, 2oz of fresh blueberries! Yum yum yum! Top it with Whipped Butter and Walden Farms sugar free syrup.

    Bacon, eggs, sausage, all the rest....don't compare

    I'm getting super hungry now. I DO have some leftover cooked spinach......black bean breakfast burrito may be in my future!!

    And protein pancakes sound awesome. I love protein powder recipes!

    Seconding the breakfast burrito idea!

    Gosh, I LOVE breakfast for dinner. I tend to go overboard with the breakfast comfort foods though. I enjoy vegetarian sausage patties (I'm not a veg, but they taste awesome), eggs and hash browns rolled up in a tortilla. I'll also throw in some bell pepper if I'm not tooooo lazy.

  • Breakfast for dinner is one of my favorite things. A large pancake, one egg over medium, a slice of bacon or a sausage patty. Perfectly sized.

    I guess it depends how healthy a breakfast you want. If it was me I would do an eggwhite ommlette with vegies. Turkey sausage. Maybe a sweet potato.:bigsmile: Secretly I would love a big ol plate of biscuits and gravy!!!!

    If you're going to have a breakfast burrito, I usually use the Flatout light flat bread for the wrap. It tastes so good and only has 90 calories and lots of protein and fiber.

    Just did this last night. the Mrs cooked and made scrambled eggs and she tossed in a little light ranch dressing to jazz it up a bit. Eggs bacon and toast quick, easy, not a lot of calroies and a nice amount of protein.

    If I do the cooking I go with a fried egg sandwich. Eggs Sunny Side or over easy, toasted bread, a slice or two of chesse and based on what we have I'll had on a little bacon, ham, turkey, salami or my most recent option turkey pepperoni.

  • Huevos Rancheros. High protein and fiber. I normally bake my tortillas sprayed with nonstick spray. :wink:

    What about a breakfast pizza? Might be a bit higher-carb than I'd like, but cheesy eggs and salsa on a pizza crust sounds kinda amazing.

    French toast. This is my go-to for a quick and relatively low cal dinner. Two slices of Ozark Hearth 100% wheat, two eggs, cinnamon & a splash of milk, Cary's sugar free syrup, and thinly sliced strawberries. To die for. And I never ever say things like "to die for" :-D

    Others...

    lemon-ricotta pancakes with a touch of powdered sugar and fresh lemon juice

    bean sprout & onion omelette with Sriracha

    omelettes of any type. I'm partial to baby spinach, mushrooms & onions in mine. With or without cheese.

    crepes with bananas and Nutkao (or Nutella)

    crepes with FF cream cheese or Neutfchatel & milk & sugar or Stevia (blended as filling) and fresh berries on top...or peaches

    Yum. Good thing I'm headed to IHOP for lunch for 2 pumpkin pancakes topped with Cary's SF syrup ;-)
