Chocolate Date Cake
I mentioned this in another thread and lots of people seemed to think it was gross, but I figure some people out there have to interested in a delicious cake that's packed with nutrients. I found the recpie on Dr. Oz's website and made it for my husband's birthday. I loved it.
Cake
1 2/3 cups whole-wheat pastry flour
1 tsp baking powder
3 tsp baking soda
3 1/2 cups pitted dates, divided
1 cup pineapple chunks in own juice, drained
1 banana
1 cup unsweetened applesauce
1 cup raw beets, shredded
3/4 cup raw carrots, shredded
1/2 cup raw zucchini, shredded
3 tbsp natural, nonalkalized cocoa powder
1/2 cup currants
1 cup chopped walnuts
1 1/2 cups water
2 tsp vanilla extract
Chocolate Nut Icing
1 cup raw macademia nuts and/or raw cashews
1 cup vanilla soy, hemp or almond milk
2/3 cup pitted dates
1/3 cup brazil nuts or hazelnuts
2 tbsp cocoa powder
1 tsp vanilla extract
Directions
Preheat oven to 350°F. Mix flour, baking powder and baking soda in a small bowl. Set aside.
In blender or food processor, purée 3 cups of the dates, pineapple, banana and applesauce. Slice remaining 1/2 cup dates into 1/4-inch pieces.
In large bowl, mix sliced dates, beets, carrots, zucchini, cocoa powder, currants, walnuts, water, vanilla and flour mixture. Add the blended mixture and mix well.
Spread in a 9 x 13-inch nonstick baking pan.
Bake for 1 hour or until a toothpick inserted into the center comes out clean.
For the icing, use a high-powered blender and combine all icing ingredients until smooth and creamy. Spread on cooled cake.

That's exactly what it's like! You get all the wonderful nutrition and vitamins that your body needs, but also can satisfy that pesky sweet tooth. I put a little organic ice cream on top or some fresh homemade whipped cream with fresh berries and just go to town. It's great!

Cake and beets should not ever be in the same sentence...
Actually, legit red velvet cake (AKA delicious) is supposed to get its red color from beets, so it's not an unheard of thing and isn't as bad as it sounds .0 -

According to the link (I haven't added this to my recipe maker) it's 430 calories per slice, assuming 12 slices (Those nut calories add up fast) but the cake is fairly dense so a 1/2 slice would be very satisfying if calories are a huge concern. Or the nuts could be omitted in favor of something lighter.0 -

Anyway, sorry I got pulled away from the computer and couldn't continue to keep up with the discussion, and thanks everyone for your help, and yeah I realize now that beet cake might be gross to a lot of people. While I did enjoy it (my husband did not) it seems to perhaps it wasn't as appealing to the 'masses' as I expected.
I had to spend some times thinking over some things these past few days but I do want to thank everyone for giving me a little perspective and letting me see that maybe I was more 'unreasonable' about some things than I thought. That's right, this little cake post did all that. Enlightenment comes in the strangest of places.0 -

I can't really agree. I think that like you said before- if you don't like it, keep it moving. No need for people to say stupid ish. Everyone has different taste and everyone is not going to like everything. It would be a waste of my own time to post a comment about every recipe I didn't like, or disagreed with- esp if no one asked. But I guess people don't mind wasting their own time.0 -
