making a chunky soup in the slow cooker - veg broth, can of diced tomatoes with liquid, half a block of tofu diced, diced potatoes, diced cabbage, carrots, red onion, beans of choice, diced eggplant, other veggies you like. dump in the slow cooker, add some water too, and spices of your choice. cook low 8 hrs or high 4 hours.
boca meatless ground crumbles are vegan, you can make a chunky spaghetti "meat sauce" with them, or use lentils and veggies instead to make a chunky sauce over shirataki noodles or eggless noodles.
chili is also vegan, use meatless grounds or lentils, mix with diced tomatoes, tomato sauce (not pasta sauce), other beans of choice like kidney, season with chili powder, hot sauce, cinnamon, cocoa powder. can eat over quinoa or rice.
using the meatless grounds make a taco salad, season with cayenne, cumin, chili powder, paprkia salt and pepper. serve over lettuce with onion, sliced mushrooms, tomatoes and a dairy free topping like fake sour cream. make a "queso" like dip with cashews and nutritional yeast.
can use crumbled tofu in place of ricotta cheese and make a baked ziti type dish, use soy shredded cheese or nutritional yeast for a cheesy like taste.
make a curry sauce, use tofu, peppers, onions, mushrooms and serve over rice.

roasted garlic potatoes:
yukon or red potatoes, cut into wedges or diced
toss with olive oil, oregano and either miced garlic or garlic powder, and salt and pepper
bake at 350 about 15-20 minutes
mix vital wheat gluten with water and make seitan, cook in vegetable broth in a slow cooker on low for 2-3 hours. can use seitan in place of beef tips or chicken.
stir fry is awesome - broccoli, carrots, mushrooms, celery, spinach with either rice or shirataki noodles and either tofu or seitan tossed with soy sauce and spices0 -
