    To me, it sounds pretty freakin' awesome. I usually use a white sauce to make "cream of whatever subsitute" this will go nicely with porkchops and steamed broccoli.

    Actually, my hubby makes something like this every year for Christmas Eve, and everyone loves it. Even the absolutely-not-on-a-diet, meat-eating enthusiasts.

    Sounds good, thanks for the link. I made a creamy cauliflower "cheese" sauce with nutritional yeast and it turned out delicious and very low calorie. Even my very suspicious husband liked it. I was shocked at how creamy and tasty it turned out.

    My favourite way to eat cauliflower is to roast the florets until golden brown then toss in a creamy cheese sauce. For the sauce, I combine cream/milk, cream cheese, parmesan, lots of garlic and salt and pepper. It's so darn tasty.

    Just a tip---It is helpful when people list the name of the dish in the title or the very least in the message, then we it doesn't take so many clicks just to see what someone is talking about.
