Two ingredient gluten-free pancakes - really!

Everyone who I know tried this recipe loves it, so I thought I better share it!

2 Ingredient Pancakes:

Mix/blend 1 ripe banana and 2 eggs. Cook like you would make "normal" pancakes.

Makes about 8 silver dollar sized pancakes, about 31 calories each. (~245 calories in the batch!)

No syrup necessary. You can also add berries, vanilla, even PB2, if you want them to have a different taste. My kids like it with blueberries. I eat a stack of 6, as they are thinner than flour pancakes, with no syrup and a bit of natural peanut butter somewhere in the pile.

    Had these for breakfast last Saturday. Very yummy made along with some turkey bacon and a glass of milk. Filled me up for quite awhile.

    LOVE these. will sometimes add ground flaxseed - can help thicken the batter and addds some nutrients.

    I make mine slightly different. I use one ripe banana and two egg whites. It lowers the calories and cholesterol levels. I also like add in's- sometimes I add flax seed, chia seed, a scoop of protein powder, peanut butter, etc. I normally top with warm peaches or a blueberry/strawberry compote that I made.

    Bump. These are still a big hit, and with all the other baked temptations during the holidays, though this should get a bit more airtime.

    My kids ask for these every weekend! Any other unique ideas for add-ins?
