Fast, easy & healthy lunch ideas. No microwave!

Hola! I am originally from California but have been living in Spain for the past year. It's great living here, but the food isn't exactly the healthiest, especially when trying to lose weight. For the most part I'm fine with breakfast and dinner (I cook), but my problem occurs at lunchtime. I work in an elementary school where during our noon 30 min "breakfast break" they usually only feed us cut up pieces of baguettes, an assortment of packaged pastries, coffee, juice, and fruit. I am really grateful for the fruit, and I usually eat 2-3 pieces during this time. But to be honest, eating only fruit isn't going to cut it, especially for a big guy like myself. I've been making turkey sandwiches (wheat bread, turkey, lettuce, tomato, mustard) for the past week but the lack of variety is killing me! I need to mix it up before I never want to eat another turkey sandwich again. Can anyone please suggest fast, easy and healthy lunch options I can prepare at home and take to school? I don't have access to a microwave at my school so that further limits my options!

I love soups for lunch - infinite variety if you make your one. Can you get a Thermos so you heat it up in the morning before you leave and it'll stay hot til lunchtime? Or I often have tuna salad for lunch - effectively just a can of tuna and a big salad, which is easy to prepare and doesn't need heating.0

Big salads- like greek salads with light/ff feta, kalamata olives, artichoke hearts; pasta salads using light/ff ingredients and dressings. Thermos like above poster mentioned with things like Chili, stews. Tortillas rolled up with low cal fillings- light ham turkey or chicken with light cream cheese or goat cheese, choice of greens, tomatoes, onions, avocados, etc.0

Can you make a lot of food all at once to portion out over a week? A big batch of rice and beans with whatever added meat and vegetables you like can go a long way. There's also this recipe (http://allrecipes.com/recipe/spicy-chicken-and-spelt-salad/), which takes a little time to prepare but is mostly just chopping and mixing.
