Nutritional Value Question - Beef Marrow Bones?

I'm currently making a batch of basic beef stock and entering the recipe into MFP, but I'm at a loss when it comes to the marrow bones. Nutritional Facts on the package list everything as zero because, I assume, you don't eat the bones.. but I know the marrow itself has calories and nutrients. I DO see an entry for bone marrow in the food database, but how would you estimate the amount of marrow in the bones (1.58 lb)? is there a generally accepted ratio of marrow to bone by weight?

  • I see that no one answered this question... I am now making a large batch of beef bone marrow broth and looking for help on how to enter the beef bones used in my recipe... Any suggestions will be greatly appreciated!

    You might be able to get a value for beef stock, which is made from bones, as opposed to broth. I think it's going to be difficult to be precise, without removing the marrow separately and weighing it. Certainly, the fat that is in marrow would contribute significant calories if you don't skim it off the top of the stock.

    You could cool the broth, remove the fat and measure it, and then add it back in. I would assume 100 calories per tablespoon of fat, given that it will contain a bit of water.

    I used marrow bones in soup. I weighed them before adding & then weighed the bones once the marrow cooked out. Not precise but gave me a reasonable approximation
