My life over the Fall '13 college has been jam packed with nary a day of rest. I've been packing the simplest of lunches to keep me from eating out and wasting money. Problem is, now that I have three free days I have nothing for me to eat at home. I could still eat the salads and the thrown together veggie mixes, but I was always bad for eating for something to do. If I have a few meals I could plan that are good for me and still very simplistic (I mean extremely simplistic) then I think I'd be less likely to eat the lean pockets and pizza rolls we still have lying around.
I already have some small flounder fillets but I've never baked fish before so I'm just as clueless.
Is there any chance anyone has any suggestions or ideas for quick meals that aren't a hassle? That may or may not involve flounder?

Fish... add lemon juice, salt, pepper, and tamarac (if you have it and liked it) wrap in parchment paper and bake at 350 until done. Depends on size of fillet...maybe 20 minutes. Add steamed or saluted veggies.

My favorite way to have flounder is to season it with Old Bay, wrap it in a foil pouch with a sprig of dill and a little lemon, and bake at 350 for approximately 15 minutes. It's a really delicious fish. You can also dredge it in flour or seasoned ground bread crumbs and pan-fry it with cooking spray or a little bit of butter (depending on which fits your goals). Don't fry it uncoated, as it will basically disintegrate. Both of these preparations are good served with strongly flavored vegetables like asparagus, Brussels sprouts, kale or other very dark greens, etc.0
