Make your own Thin Mints - better than the Girl Scouts
Ok, not a low-calorie recipe, but 'tis the season to do baking. These really taste like "proper" thin mints and consist entirely of real ingredients!
For the wafers:
225g butter
1/2 cup sugar
1 cup cocoa powder (not hot chocolate mix, real cocoa)
pinch of salt
1 1/2 cups flour
Knead the above into a smooth dough, roll out really thin (about 3-4 mm, like a pound coin ) and cut into shapes with a biscuit cutter or a glass. Transfer to baking sheets covered with baking parchment, and bake for 10 minutes at 175° C.
The wafers will be very fragile, so handle them carefully and don't use very delicate shapes.
When they're cool, melt 250g of good quality dark chocolate, mix in 1 teaspoon of peppermint extract (depending on the strength of yours, you may need more or less) and use two forks to dip the wafers. The edges of your shapes will be better defined if you let them dry on wire racks, just put something underneath to catch the dripping chocolate!

I have a similar type of recipe
60g (2oz) packaged cream cheese (the lower fat variety works just as well)
1 1/4 cups icing sugar (umm I THINK that is called powdered sugar in USA - they type of sugar that you mix up to make cake icing)
peppermint essence
dark chocolate
Beat cream cheese until light and fluffy, gradually add sifted icing sugar (add more if necessary to make a stiff dough).
Add peppermint essence to taste, then knead well.
Dust board with icing sugar and roll out to 1/4" thick - cut into small round shapes, cover and leave 24 hours to dry.
Melt chocolate then use 2 fork to dip/coat the mints - allow to set on foil covered trays.

Thin mints are my absolute favorite Girl Scout cookie so must try these! The peppermint creams sound delicious also so may be trying those as well!0

I ended up using about 400g chocolate to coat them. At 100 wafers per recipe, it works out at 53 calories each, 6g carbs, 3g fat, 1g protein, if that helps anyone.
