New at cooking. Any ideas for real healthy meals?

I don't have a whole lot of experience cooking. I'm used to making things from a box, or "heating up frozen foods" I love how I see on TV how people can make delicious meals and add fresh veggies to it and/or see how people use lean meats. I love fish. I'm a big fish eater..like talpias, salmon, tuna etc., I'm thinking about making up some fresh fish steaks or fillets, maybe marinate them in a sauce or something and add fresh veggies. I love turkey and chicken too. I usually do my shopping at Walmart. I just need some ideas with simple instructions to start whether you have a simple guide from your own cooking experience, or from a website you know. I'd love to hear it...I'm also interested in homade salsa ideas or tomato sauce for pasta too. Anything helps! Thanks so much in advance!

    there are several websites that have good recipes that are easy and healthy, generally, if you already have something in mind, you can just do a Google search for that item and put "healthy" in front of it and you'll get plenty of options. For instance, if you want salmon, search for "healthy salmon recipes", or "healthy marinated fish". Maybe this helps!
  • I find that roasting veggies and/or grilling them (add a little extra virgin olive oil, sprinkle a little sea salt and fresh ground black pepper) is great. In the winter, I use a little low sodium vegetable stock and put the veggies I've roasted in a blender and make a soup. Add a slice of toasted french bread, a green salad and a dollop of low fat sour cream and you got a meal! Really simple too!

    Also, get a subscription to Cooking Light. there are a number of relatively easy recipes that you can cook. Variety keeps the boredom away and you might find something new to eat that is actually healthy. Cooking for yourself helps to reduce your sodium intake.Most of the sodium you eat comes from frozen, boxed, processed foods.

    If you can find slow cooker recipes that you like, that is another strategy. It usually makes a lot so you can eat it one day, freeze some and revisit later. My Foodsaver is one of my best friends. I vacuum pack a lot!

    Simple veggie soup...one bag of frozen mixed diced veggies, (frozen r healther than canned, 1 can of V8 Juice large, season to taste. add cooked meat of your choice, I use ground chuck or ground round, browned, drained and rinsed. also add a little water, like half the V8 can. Simmer, and enjoy.

    Here you go: This is very easy with few ingredients. The key is the quality. Use imported San Marzano tomatoes & fresh basil.

    San Marzano Tomato Sauce

    6 cloves garlic clove, cut thin slices
    3 tbs Olive Oil
    90 oz Tomatoes, Canned, Whole, Cut Up(San Marzano)
    3 oz Fresh Basil
    2 tsp Kosher Salt
    1 tsp Black pepper (fresh cracked)

    1. Cook garlic over low heat in Olive Oil for 3-5 minutes(do not let garlic brown). Add remaining ingredients and simmer for 1-2 hrs) on low heat or simmer mode if your stove has it.

    Servings: 16

    Cooking Time: 2 hours
    Total Time: 2 hours and 15 minutes

  • The crockpot is a great way to cook healthy. There are several threads here on MFP and on the internet offering crockpot recipies. Easy to use/prepare meals and it will give you multiple servings.
