I like to saute it in some olive oil with fresh garlic. Just a tiny bit of oil so it's not greasy.0

I love baby spinach salads. I put it into scrambled egg whites and use that to make breakfast tacos. I also used to make it into smoothies with frozen fruit, tofu or Greek yogurt, and a variety of Torani/ daVinci sugar free flavoring syrups.0

I'll put spinach in/on just about anything... Sandwich, wrap, pizza, dip, salad, pasta, you name it. I'd suggest looking on a site like allrecipes.com and searching for spinach recipes there.0

Toast some pine nuts in a little bit of oil, toss in some spinach to lightly wilt, and go to town. Or mix it in with couscous like I do or pasta. Add some asiago or feta.

Also, where I'm currently staying I get to do most of my "cooking" in the microwave (yeah, it's super awesome... sarcasm... ugh). I want to be eating spinach regularly partially because I can get iron deficiency anemic, so the iron content of spinach is great for me. I microwaved a BIG bowl of spinach (because it shrinks) sprinkled with salt, pepper, and garlic (I used powdered, but fresh or whatever would be great I'm sure... I do love garlic!)... microwaved it until it started to wilt, pulled it out and added about 1/2oz of blue cheese (mmmmm love that stuff!), put it back in the microwave until leaves were fully wilted, stirred, and had super delicious blue cheesy garlicky spinach... OMG it's so yummy!!! Well, if you like blue cheese that is... if you don't... then skip that part ;-) Replace the blue cheese with another strong cheese if you want.
In any case, both recipes are Great and EASY. The blue cheese one I've probably eaten at least 6-8 times in the past month - it's so yummy that it's almost more like a treat to me than anything else!

Pizzas, egg dishes, with rice, salads, soup.0 -
I like it raw in a salad with a hardboiled egg and some chopped walnuts. Drizzle a little lite French dressing on it. Really tasty and fills me up.0

Hot Spinach Dip
Block of cream cheese (I always opt for the fat free)
Can of Rotel Tomatoes
1 pkg. (about 10 oz) frozen spinach.
Throw in crock pot. Heat. Stir. Eat on tortilla chips.
(edit to add option)...You can also throw in a can of artichokes for some added nutrition. (May need to chop them a bit)0 -

Homemade cream spinach - 6 servings, 1/2 cup per serving
Spinach - Frozen, chopped (10 oz)
Horizon Organic - Heavy Whipping Cream, 0.5 container (32 tbsp ea.)
Cheese - Parmesan, shredded, 8 tbsp
Total: 1,095 calories; 19 carbs; 93 fat; 29 protein: 13 fiber; 2 sugar

My favorite is made so that I have something that's easy to go to when I don't actually feel like cooking.
I buy those blocks of frozen spinach and cook one at a time, boiling it with any spices that I want (usually something simple like salt and garlic or just some Mrs. Dash). Then I put it in a tupperware container to keep it at least pseudo-fresh.
Then when I want a quick meal, I'll take about 1/4 cup of the spinach, two egg whites, and maybe 1/8 cup of some cheddar cheese, and mix it in a skillet over medium heat until the eggs are scrambled. Either put it on wheat bread or a tortilla (or two, depending on how much I actually made) for a yummy breakfast sandwich or taco.0 -
I make a salad with spinach, craisins, feta and different fruit vinaigrettes, as well as a lot of the above suggestions. I love it sauteed with tofu and Thai peanut sauce, too.0

I use spinach in probably 1 out of every 3 or so of my meals!!! Any combination with eggs makes a great breakfast... scrambled or omelet loaded with other veggies. Or make Panini's for lunch/dinner with turkey, low fat cheese and tomato!0

my favorite is cook and drain frozen spinach, or you could cook up baby spinach until it wilts. mix in ricotta, marinara sauce, oregano and garlic,and grated parmesan if you want. delish.

Since the only way I can stomach spinach is raw, I put into my smoothie. I do 2 handfuls of spinach (raw) and add water, a banana (CANNOT FORGET) and whatever other fruit I like-apple, cherries, mixed fruit. and blend.
You CANNOT taste the spinach-only the other fruit..however it may be a gross greenish brownish color, or green, or purplish..lol0 -

1. Canned Tuna, Thawed out frozen chopped spinach, and a bit of fat free mayo...makes a good tuna sammie.
2. If you like any type of bean, take some onions, tomatoes, garlic, fresh spinach...sautee with your favorite seasonings, add some beans.....excellent fiber and tastes delicious.0 -

It's the canned coconut milk, like used in Thai food, not the boxed coconut water :-) My favorite brand is JFC (it seems a little thicker than most) but any canned one should work :-)0 -
Saute a bunch of mushrooms with plenty of garlic and some Worcestershire sauce; when they're as you like them add a crapload of spinach and stir until just wilted; serve the whole mess over some hot, freshly cooked lentils. For extra credit, add in some sliced chicken sausage while you're sauteeing the mushrooms.0

I love spinach as a stuffing for fish or chicken. If you mix it with ricotta and mozzarella, it's wonderful this way.0
