Meal Suggestions??

I work at a grocery store, shifts ranging from 10-14+ hours/day. Deli food is out, and salads and frozen meals get boring. I know this sounds absolutely ridiculous, since I have endless possibilities in front of me, but: What the heck should I eat?

What's your favorite quick/easy limited prep meal?

(I have a microwave I can use.)

    Taco Salad. Rinse 1/4 to 1/2 cup kidney beans and/or black beans and toss them in with your favorite lettuce, 1/4 cup shredded cheese, 2-3 tbs salsa. If you have the extra calories crush some corn chips and mix them in also. Top with 2-3 tbs of your favorite fat free sour cream. Some time I also add scrambled browned beef. Onion, green pepper, tomato, etc. can also be added. There are many various ways to put it together.

    Sandwiches, salads with chicken/turkey on it, yogurt, cheese/meat and crackers, oatmeal, tuna and crackers, apple with pb on it. Hope this gives you at least a couple of ideas!

    One more thing. I often make a crock pot full of vegetable soup. chili or make a pasta bake. (Make it all healthier) and have that all week long. Then you don't have to keep thinking of things to eat!
  • i too do the same thing. i work in a grocery store, get an hour lunch and walk around for 30 minutes trying to figure out, what is there to do here? my favorite is getting a salad, no meat or anything and a cup of mixed fruit from produce. while the salad is bland, the fruit gives it the great amount of sweetness. and fresh fruit, always amazing anyway. im a fool for the bathhouse farms (cant remember if thats right) fruit drinks too. yumm. lol. sorry, now im wanting one :) but you can buy little pouches of nuts for a salad- anything to spruce it up. frozen lean meals are okay- just not as filling.. its really hard, i know people probably think we're stupid having this hard of a time figuring it out- but you have no idea when your options are limited with no stove! .. if you find anything else- let me know. i start back at work wednesday and its gonna be so hard on me :( lol. hope i helped..

    Doesn't sound ridiculous at all. . .I used to work in a grocery store too and those endless possibilities in front of us can sometimes be the problem!! I'm not really full of suggestions or anything like that, but just thought I'd say I understand where you're coming from & not to feel silly! I do like karamae's suggestion of cooking something that you can take with you all week, throw it in a tupperware container & it can go straight into the microwave from there! Good luck!!

    I am so glad that it's not just me!! My store has a soup bar, so I have that sometimes, too. Which Bolthouse is your favorite? I've been eating a lot of Lean Cuisine/Healthy Choice, lunchmeat from the deli and salads, but it just seems boring after awhile! The rice pouches that cook in the microwave are good, just a lot of sodium.

    Thanks! I do keep peanut butter in my desk, for when I want apples or bananas. Or a sandwich! I like the idea of oatmeal! I don't know why I never thought of that before!

    refried beans with brown rice, wrapped in a whole grain tortilla shell with diced tomatoes and lettuce, add sourcream for another 25 cal / Tbsp. (I make a pot of brown rice almost every week and use it in various recipes)

    or

    baked salmon (4oz) on whole wheat bun with lettuce, tomato, mayo and sweet potato fries (no oil) only takes 20 mins

    or

    stir fry anchovies, capers, diced tomatoes, black olives, fresh garlic and toss with whole wheat spaghettini...in about 15 mins

    hummus and crackers or vegetables , take a tortilla with low fat cream cheese, turkey, basil, tomatoes, onion and peppercini's on it (I love this). Try to make extra for dinners so you have left overs to take, I hope this helps
