HI,
I am on the go non stop. Any suggestions or ideas of portable food that I can eat or drink while on the road? Or simple nutrition loaded snacks I can munch on during my short breaks? I am horrible at planning and short on time, I don't have the ability to take a day and make a weeks worth of meals. Thanks for any ideas

Pickled boiled eggs. Stinky.. but Soo good! I forgot about them! About 70 calories a piece, 6 grams of protein, 6% of your vitamin A, 4% or your iron. We use dill pickles.. mostly just so we can use the pickle juice when they are gone. Hard boil and peel the eggs and plop them into the juice. Just make sure you don't put in too many eggs, you want the liquid to cover them. They are better in the juice after about 3-4 days and they get preserved by the pickle juice.. they last weeks without going bad. A plain boiled egg in the fridge goes bad in about a week. My family has been doing this with eggs since I was a kid. I've even got the neighbor kids hooked on them now.
Chicken Sandwich ? - Pre-measure out a few ounces of meat (I like about 2 1/2 ounces on mine.. sliced thin. I use 0-calorie pan spray and season with Old Bay.. SOOO good!).. find a bread that works for you.. be it low-calorie or high nutrition, olive oil mayo (way lower in calories and still tastes like mayo). Lettuce and tomato.. and avocado if that works into your calories or tastes. So like my sandwich works out to be 280 calories (88 for chicken, 120 for bread, 35 for mayo, 2 large green lettuce leaves 8 calories, a medium slice of tomato 4 calories, 1 tablespoon mashed avocado 25 calories). Alfalfa sprouts are REALLY good on this too. Really load it up on veggies. You can have all this weighed/measured out ready to be kept in a cooler with you to put together when it's time to eat. Put a few drops of lemon juice in your avocado if you aren't eating it right away or it turns brown. I like to mix the avocado and mayo together so you've got a thicker spread.
Green beans are a good snack. Either raw or cooked. They are a great size for snacking.. easy to grab.
Frozen grapes
Oranges. I grew up in Florida.. my dad worked construction and I worked with him sometimes. He never packed a real lunch.. just an orange. That's all he'd eat until he got home for dinner. I remember being so hungry the first few days of a project.. but you adjust. Drink lots of water0 -

I travel a lot for work and here are some of my go-to's: protein shakes with berries, peanut butter sandwiches on whole wheat, baggies of munchable veggies, premade salads with dressing on the side you can add later, and bananas (cause they're just easy).0

Awesome ideas, seems so simple, till I hit the store then I am over whelmed. I wish I could slow down and enjoy a meal haha, I am in nursing school, I work and I am a single mom so go go go. Love every minute though. I appreciate all of the tips!0

Ya, the pickled eggs are pretty addicting. My husband was eating them for breakfast.. and snacks in front of the tv.. he'd take a bite then salt a little bit, repeat. The hard part is keeping pickle juice on hand to make the next batch. You can only use it once for eggs because they use up the pickling abilities of that mixture. I've attempted a 2nd and they just taste watery and go bad really fast... not recommended.
For the mayo and avocado.. I'm not sure. I think I only ever put those together and ate immediately. You could give it a try. I haven't had avocados for awhile and I'm missing them. I usually add lemon to my avocado though because when I cut into one I just scoop it all out and mash together... then you have to put the lemon in so it doesn't turn brown. I might try lime in them next time.. I hear it has the same effect and I really really like lime.0
