Low-Cal Pumpkin Spice Cupcakes

I know that there's a million cupcake recipes out there, and maybe this one has been shared before, but it's AWESOME, so I thought I'd post it - I'm making these for my son's 2nd birthday this weekend. It uses boxed cake mix, so it's also super easy.

1 box spice cake mix
1 cup water
15 ounces canned pumpkin
1 teaspoon vanilla extract
1 1/2 teaspoons cinnamon

Preheat oven to 350. Line 24 cupcake pans. Mix all ingredients in bowl and pour into the liners. Bake for 25 minutes. Cool before serving. They are very moist cupcakes.

Hopefully you'll try it out - These were posted on a Weight Watchers blog a long time ago and that blog said that these cupcakes average about 50 calories each, so they're a guilt free treat. :love:

    Printed. I'll have to try it. I have a definite sweet tooth. I struggle to not eat all of the sweets that I bring into the house, but if I totally deny myself, then I'll go crazy and binge. These sound awesome. Maybe with some cool whip instead of frosting?

    Only 50 calories?? That's amazing. I can even make an allowance for icing if they're that low. I'm looking for a dessert to bring to Thanksgiving so there's a healthy alternative. It's these or some pumpkin oatmeal cookies that I'm gonna make.

    I make these but add nothing but the pumpkin to the cake mix....they really are yummy.....may add the water next time, cuz the batter is really thick without it....

  • Yup, checked and rechecked. It's actually 13, but I rounded up and put lite cool whip on them, served warm...even better

  • I did the math on these, going off the nutritional information on the cake mix box and the can of pumpkin. It actually averages out to 90 calories for each muffin. Still great, but not as low as 50 calories each. I guess it must depend on the cake mix you buy. Mine was Duncan Hines. They are yummy, by the way. Very much worth the calories!!

    I've been making these for years now, only I don't add the water, vanilla or cinnamon. Honestly, didn't realize that they were so low in calories. I can tell you, tho, that they are high in flavor :)

    Give them a try. You don't taste a real lot of the pumpkin, I think the spice cake mix covers that. I bake mine at 350 for 25-30 min. One box of spice cake mix and one can of pumpkin usually make 12 muffins for me.
