Does anyone have a good recipe for Beef Vegetable Stew? I want to make it next week. But I am not sure if I should use beef broth or tomato soup. Please share your recipes!

definitely use broth. You coul even use water and just add lots of spices and maybe bullion for flavor.
If you want tomatos in it, just chop some up or get canned chopped tomatos.
What else do you like in your stew?
I like carrots, celery, onions, zucchini, corn, peas and potatoes (usually red or white).
My bf likes to add flour to make it more stew-like. I'm totally fine with more soupy stew.0 -
Bacon beef stew
2 lbs stew beef cubed marinate in 3/4 cup of Italian dressing 1 hr
3 cups mushrooms sliced
3 medium potatoes cubed
3 cups fresh carrots sliced
large onion chopped
14.5oz beef broth
14.5oz stewed tomatoes undrained
6 slices bacon crispy
fry bacon - I usually do this in my microwave and then use some of the grease for cooking the onions and mushrooms. Those calories are already counted in the bacon.
In a dutch oven cook onions and mushrooms until soft
add stew beef, potatoes, carrots, broth, stewed tomatoes, and bacon
bring to a boil
cover and let simmer low heat for about 1 1/2 hrs
uncover and simmer 15 mins0 -
Yum, thanks!0

Made it last night with stew meat, carrots, brown onion, potato and no sodium added beef stock, Mrs Dash and pepper. I like to add low sodium tomatos if I can find them!0
