I just made this tonight, and it was absolutely delicious.
This recipe makes 2 but can easily be scaled up.
Ingredients:
2 chicken breasts, butterflied
2 oz reduced fat cream cheese, softened
1/2 cup dried cranberries
4 slices maple bacon
Preheat oven to 350 degrees.
In small bowl, mix cranberries and cream cheese into two small balls. Stuff chicken with cream cheese and cranberry mixture. Wrap in two slices of bacon each. Secure with toothpicks if necessary for cooking.
Bake at 350 for 40 minutes. Turn oven to 450 degrees. Bake for 5-10 minutes until bacon is crispy.
I would provide a picture of it done, but it smelled so good, and I was really hungry... sorry LOL

It turned out to be really tasty and a nice mix of sweet and salty.

I think I made a big caesar salad as a side dish the first time. The second time, I think I made spinach.0 -

sounds amazing, appreciate it! thanks again for sharing :]0 -
Sounds amazing. I bet if you replaced the cranberries with green chili or diced jalapeno, it would be good too!0

I really liked the combination of sweet and salty in this dish, especially with the maple bacon. Jalapeno could be a nice addition to add a little more flavor.0 -
Ugh, That sounds sooo good!!. Might have to make that tonight with a side of broccoli. Thanks for the recipe.0

ETA: After making this a few times, I had better luck getting the bacon crispy by transferring these to a raised pan (broiler pan with nonstick coating works great) just before bumping up the oven temp.0

BUMP - going to try this - thanks !0

Yum! And I happen to have all the ingredients too. Will have to sub the cranberries for my fruit hating husband's piece, maybe some fresh spinach.0

Spinach could work. You could even make a chunky salsa out of tomatoes, peppers, and seasoning to go in lieu of cranberries. If you use tomatoes, I'd recommend slightly pre-cooking them to soften them up a bit.0 -
Drool worthy. Thank you!:drinker:0

I do not like chicken but this sounds yummy......my husband, however, does not like cream cheese. I may give it a try and not tell him whats in it.0
-
Yum - never thought about adding stuff to the cream cheese0

I can see this being good with spinach or brocolli and mushrooms in place of the cranberries too...0

I also have a variation on this that I make from time to time too. I use Parma Ham on the outside and sage and onion stuffing inside the chicken as I do not like any forms of cheese.
I also serve it with a side salad and find it extremely filling.0 -
Sounds lush! I might have to try this!0

Bump for later!0

I made this last weekend with a few tweaks and it was excellent! Thanks for the recipe!
My changes: I used dairy-free cream cheese, added spinach and roasted garlic. YUM!0 -
