Yummy Pumpkin Protein Baked Oatmeal

It's really delicous, so try that sometime too. But I knew I could use this as a base to make a protein filled breakfast thats wonderful for on the go. I bake it most Sundays and have breakfast for the week.
Pumpkin Protein Baked Oatmeal
2 Cups Old Fashion Oats
1 Tsp Baking Powder
1/4 Tsp Kosher Salt
1 Cup Pumpkin Puree
1.5 Cup Unsweetened Coconut Milk (or use Skim or Almond, but Coconut Milk works fantastic here and gives it a creamy texture)
1 Egg White
2 Tbsp Ground Flax
2 Tsp Brown Sugar Splenda (or use regular Brown sugar)
2 Scoops Protein (I used Cinnamon Swirl Cellucor, but Vanilla works great too)
1. Combine the Oats, Baking Powder, Salt, Splenda, Protein, and Flax in a bowl. Mix together.
2. Combine the Pumpkin, Coconut Milk, and Egg White. Mix Together.
3. Add wet to dry and mix well.
4. Pour into square baking dish and bake at 375 for about 25-30 minutes.
Split into 9 Servings this has:
Calories: 126
Fat: 2.8
Carbs: 16.5
Fiber: 2.6
Sugar: 2.6
Protein 9.3
I usually have two for breakfast. Hope you enjoy it!

It's pretty easy to copy and paste it into whatever you use for word processing - I use Word - then you can change it, add to it, save it or put it into your own cookbook file! I've been doing that for over 2 years now and have quite a collection! I think it is pretty simple to do!0

I have two pumpkins left from my CSA box that still look fairly good- glad to see a recipe that doesn't call for canned! I hope they still are good, guess I'll see once I cut into them. Thanks for posting, this looks great!0

Woah, very late response but-- No, not a must at all. You can omit or sub oat bran/ground nuts/whatever tickles your fancy.0 -

Woah, very late response but-- No, not a must at all. You can omit or sub oat bran/ground nuts/whatever tickles your fancy.
Oh my... Also just realized I elect out two ingredients! So sorry!
Add 1 tsp Cinnamon or Pumpkin Pie Spice or a mixture of the two to the dry ingredients
Add 1 tsp vanilla to the wet ingredients
I can't get enough of this oatmeal. CVS had Libby's pumpkin on sale for 50 cents per can!!!! Gotta love after Christmas bargains! The cashier looked at me like I was nuts as I piled 10 cans out of my basket :happy:0 -
