I'm so excited about the new flavors that came out for these yummy little 35 calorie cheese wedges. The 'light' spreadable cheese now comes in 'swiss', 'garlic herb', 'sun-dried tomato and basil mozzarella', as well as 'Queso fresco and Chipotle'. yummmmmmm
The tomato/basil/mozzarella is my favorite so far- it has the flavor of pizza!
Anyways, I would like some ideas for creating small snacks using laughing cow cheese or recipes for meals incorporating them. Certain flavors would obviously taste better in some recipes than others... I would love an idea for a 'pizza' snack idea using the tomato/basil mozzarella.

I love using them on lucnh wraps in place of cheese & mayo, or also, cooking some whole grain noodles for dinner and melting one over them. yummaaayy0

Why did I read that as "Laughing Cow Disease"???
We've had the garlic-herb and maybe I'm just someone use to what I like but when I added that to my sandwich I wasn't really impressed.0 -
I love Laughing Cow Cheese, but am sad it's got between 210-260 g of sodium per wedge!0

I love the garlic and herb on some triscuits with a cut up roma tomato. YUMMY!
I have also made a fettucini alfredo with this as well and it turned out lovely. The sodium is a killer so I tend to try and eat it with fresh veggies as a snack or lunch so that it doesn't overwhelm the whole meal with salt....
I likethe idea of laughing cow disease though.... I have a wonderful mental picture now thanks!!!! Those borden cows are all in a field and laughing uncontrollably...0 -
The other day I mixed a couple of wedges with some tuna and stuffed it into a red bell pepper--SO GOOD! (I love these little wedges!)0

If you don't know about this site - go there and search for Laughing Cow. She has TONS of recipes. Hungry Girl also has cookbooks - but I have been on her daily email for many years.

I use them (per Hungry Girl) in egg mugs (egg beaters) which she has many varieties and you cook in microwave.0 -
Weight watchers also came out with cheese wedges that are really good. I like the Jallopeno pepper ones.0

Love it! I just made a salsa dip for veggies for lunch. Here's what I used.
the Laughing Cow - Light Original Swiss Cheese Wedges, 1 wedge 35 1 2 3 0 260
Casa Mamita - Salsa Con Queso (Medium), 2 TBSP 45 4 3 1 0 280
Italian Rose - Fresh Salsa [48 oz. Jar], 5 Tbsp 25 5 0 0 0 250
Kroger - Cottage Cheese - Fat Free, 1/4 cup 40 3 0 8 0 195
Total: 145 calories 13g carb 5g fat 12g protein 0 985mg sodium (oops, a bit high in sodium!)
I had it w/ assorted veggies to dip- celery, cauliflower, broccoli, and peppers.0 -
Not to rain on anyone's parade...but I am so over Laughing Cow! I buy Lite cheeses from Trader Joe's and am much more satisfied with the taste. I really love cheese and a wedge of L.C. with my apple doesn't cut it as well as a 1 ounce cube of Aged Lite Cheddar (70 cals) does! I'll cut the extra 35 cals somewhere else in my day.0

Hungry Girl has tons or recipes to use Laughing cow cheese! I have used it with mini-pizzas on whole grain pitas too.0
