Bacon wrapped chicken with a twist (with pic)

I just made this tonight, and it was absolutely delicious.

This recipe makes 2 but can easily be scaled up.

Ingredients:

2 chicken breasts, butterflied
2 oz reduced fat cream cheese, softened
1/2 cup dried cranberries
4 slices maple bacon

Preheat oven to 350 degrees.

In small bowl, mix cranberries and cream cheese into two small balls. Stuff chicken with cream cheese and cranberry mixture. Wrap in two slices of bacon each. Secure with toothpicks if necessary for cooking.

Bake at 350 for 40 minutes. Turn oven to 450 degrees. Bake for 5-10 minutes until bacon is crispy.

I would provide a picture of it done, but it smelled so good, and I was really hungry... sorry LOL

Carbs: 18g
Fat: 15g
Protein: 37g

It turned out to be really tasty and a nice mix of sweet and salty.

    I've made this same thing but with the chicken stuffed instead with tahini and sun dried tomatoes! Now THAT is tasty!

    I think I made a big caesar salad as a side dish the first time. The second time, I think I made spinach.

    Sounds amazing. I bet if you replaced the cranberries with green chili or diced jalapeno, it would be good too!

    I really liked the combination of sweet and salty in this dish, especially with the maple bacon. Jalapeno could be a nice addition to add a little more flavor. :)

    ETA: After making this a few times, I had better luck getting the bacon crispy by transferring these to a raised pan (broiler pan with nonstick coating works great) just before bumping up the oven temp.

    Spinach could work. You could even make a chunky salsa out of tomatoes, peppers, and seasoning to go in lieu of cranberries. If you use tomatoes, I'd recommend slightly pre-cooking them to soften them up a bit.
