Easy Pumpkin Cookies

1 box spice cake mix
1 can pure pumpkin -- (15 oz.)

Mix together and drop by spoonfuls onto cookie sheet sprayed with cooking spray.
Bake at 350 for around 10 minutes or until firm.
Allow to cool.
Makes 48 cookies. These are so soft and good.

Notes: 1 point each
*you can use a white cake mix and add 2 teaspoons of pumpkin pie spice*

    You can also use devil's food cake mix and it is very similar to a brownie. Tis a recipe out of the hungry girl cookbook :P

    Having a hard time finding spice cake mix anymore...I made pumpkin muffins with spice cake mix, canned pumpkin and water once and they came out great...I like the idea of the cookies, too..Thanks for the tip on just adding pumpkin pie spice to white cake mix, in case I never find spice cake mix...

    I've tried it with chocolate cake mix - yummy like brownies. With the spice cake, I'll add a little more pumpkin pie spice mix into it. With these mixes, it's harder to work with, so I put it in a large ziploc bag, snip the corner and squeeze out my cookies. Then take a spoon, dip in cold water and use it to shape and flatten the cookies.
