I freaking love nachos and I get very sad that they're kinda unhealthy but whilst shopping I found these Special K cracker crisps and they taste kinda bleh on their own but I made nachos and they were awesomeeee
Ingredients:
-A serving (23g) of special K cracker crisps, I found the sour cream and onion flavour works best
-A sprinkling of cheese of your choice, there's no need to be afraid of a little cheese every now and then even on a diet:)
-Jalapenos, I use the yellow ones because they're sweeter and less hot
-Salsa
-Greek yoghurt (sour cream substitute)
I just put the crisps on a tray, sprinkle on the cheese and jalapenos and put in the oven until melted and ate with salsa and greek yoghurt, so good D:

Sounds awesome! I loveeeee Mexican food :) Thanks!
  • Aren't the yellow ones banana peppers?
    I love those.
    And jalapeños.
And I've done that, but with the fat free sour cream.
    Yum!

    That does sound good!

While it's still nachos, my favorite lately is this:

10-12 tortilla chips (instead of the 16-20 I probably would have used in the past)
    sliced avocado
    1/4 c. shredded cheese
    1 TBSP. salsa or picante
    chopped green onion (optional)

So tasty and filling. I could eat this for lunch a couple of times per week.

I would have to add meat. But sounds like a great idea!
