I've noticed that alot of my recipes call for some kind of cream of ____ soup mix. So I've been looking around online to try and make my own. Has anyone ever done this? Thoughts? Suggestions?

I would like to know the same.
I tried vitamixing 2 cups of raw broccoli florets to one cup of milk.
It made a chunky, thick soup but did not hold up well to cooking in my crock pot.
Would love to see what people suggest - maybe a thickener like cornstarch?
Edit: I am avoiding flour but that would be the traditional thickener.0 -
This is the only one I have made: http://www.genaw.com/lowcarb/cream_of_mushroom_soup.html and it was very good. If you Google it you will find a lot of other recipes to make your own. Many of them are just dry ingredients, so they would be even easier than the one I made.0

Cream of almost anything soup,
Sweat off chosen veg in a tiny knob of butter or oil. Add chosen stock and semi skim milk (2 stock, 1 milk) add a small peeled chopped potato for each 2 pints of liquid (thick soup) or each 4 pints (thinner soup)
Cook gently until all is soft and cooked.
Blend to desired consistency
Then and only then stir through a tiny bit of cream, yoghurt, sour cream, creme fraiche to taste.
I often find the soup is creamy enough without extra cals.
Substitute celeriac for the potatoes for even less calories.
Make in bulk, freeze in portions, only add cream at the point of serving.
Remember to weigh/measure and record everything then u can work out the portion calories.

Condensed Cream of Mushroom Soup
Using only a blender and a microwave, you can make your own condensed cream of mushroom soup. Easy to customize to your needs and tastes.
Author: Paula (Salad in a Jar)
Recipe type: Soup
Serves: 3
Ingredients
1 teaspoon onion powder
2 tablespoons cornstarch
1 tablespoon canola or vegetable oil
⅛ teaspoon white pepper
¼ teaspoon salt (or to your taste)
Pinch of sugar
8-ounces 2% evaporated milk
Handful (approx. ¾ cup) fresh mushrooms, sliced
Instructions
Put all ingredients except the mushrooms in a blender or food processor and pulse until smooth. Add mushrooms and pulse 2-3 times until mushrooms are chopped.
Pour into a 2-quart Pyrex bowl and microwave on HIGH for 3 minutes, whisking well after two minutes and again at the end of cooking time. If not thick enough, add 30 seconds and whisk again.0 -
I'm going to try this one because it says I can freeze and use in a crock-pot later..... that's my kind of plan ahead cooking!

The traditional way is to make a roux - 2 tablespoons of butter and flour, cook over low heat for a couple of minutes. Add a cup of milk, bring to a boil, then simmer for a few minutes. Add whatever, flavor, seasonings you like.0

I make 'creamy' vegetable soup all the time just using potato for the creaminess, although you could easily add in 1/2 of skim/light milk or something to make it mores. I just cook 1-2small potatoes with whichever vegetable I have, mushroom, broccoli etc, and often a little onion, in chicken stock until soft, and then blend to a smooth consistency with my stick blender. I don't see why a similar method/mix using whatever vegetable your crockpot recipe calls for wouldn't work?0
