Hi, Taco salad sound so delicious and healthy - how do you make yours? How many cals if u know off hand? Thx

    I make a veggie taco salad with no dressing just salsa.

    Lots of mixed greens
    Roasted veggies - Peppers, onions, mushrooms in taco seasoning
    Black beans
    low fat cheese
    avocado
    tomato
    salsa verde

    Taco shells, broken up (we never eat all of them unless I do this)

    Onion, bell pepper, black beans (found frozen ones, very very low sodium, and no rinsing!), corn, fresh baby portobello mushrooms or button mushrooms, roma tomatoes (not as juicy), a little shredded cheese and some salsa.

    I make my own taco seasoning with roasted ground cumin, chili powder (low sodium), granulated garlic and onion powder.

    If I add meat, it's usually lean ground turkey.

    ripped up bits of a tortilla shell (I like the softness of it rather than the crunch of a tortilla chip

    sometimes I'll add some other veggies if I'm feeling adventurous but I typically stay with what I wrote above.

    Not sure off hand what the calorie count is but it's not very high considering it's your whole meal on one plate I love a good ol' taco salad. filling meal that's super delicious and can be pretty healthy depending on the cook xD

    My taco salad is 230 calories if I leave out the burrito shell. 6 oz. chicken breast, 3 TBS. McCormick taco seasoning, 3 TBS sour cream, 1/4 cup La Victoria Chunky Salsa, 1/4 cup shredded cheese. Lettuce and tomato are negligible. Not bad at all and the protein number is great! A normal burrito shell is 200 calories, a ceramic bowl is zero as long as I don't eat it. Burrito shells are killer on the diet. That was a painful lesson for me.
  • I do not remember how many calories this was as it's been some time since I had this. You've reminded me how good this was though.
    I use ground turkey for the meat, and the standard taco season, shredded cheddar, plain greek yogurt as a substitute for sour cream, mango salsa, lettuce, black beans. As a treat I will use some baked naco cheese doritos and crush them up and sprinkle on them but be sure to measure your portion. I have found that as long as I get my work outs in I can handle having this now and then.

    I often skip the last 3 but it's delicious when I add them. I could break some taco shells in it but it would defeat the purpose of a salad for me, lol.

    Thanks! Love black beans! I will be skipping the carbs in this salad though. My carbs come from bread at lunch and pastas at supper and fruits for snacks. No room for more.

    Ground beef, tomatoes, sour cream, salsa, cheese, lettuce, tortilla chips. Maybe onion if I have some on hand which I normally do. Mmmm.

    for 2 people -
    1 cup boca meatless grounds (you can use real meat if you eat it)
    6tsp taco seasoning
    1 cup pepper onion frozen mix

    sautee peppers and onions, add meat and seasoning
    serve over 2-3 cups shredded lettuce

    i top with sliced mushrooms, banana peppers, black olives, fresh diced red onion and 2 tbs salsa. sometimes i add cheese.

    made this the other night, without cheese came out to 199 calories for a big bowl

    iceberg/romaine mix
    lean ground beef sauteed with either store bought taco seasoning (although I've learned how to make it from scratch now!)
    2% shredded cheddar
    pace picante salsa (medium)
    lowfat sour cream (but I might try non-fat greek yogurt)
    crunched up baked tortilla chips or broken taco shells
    chopped green onion and/or black olives

    Nom nom... I should get some ground meat and make it for lunch this week!

    My taco salad consists of:
    Salad greens, usually baby greens and spinach
    Cherry tomatoes
    Red Onion
    Fresh corn
    Black or Green Olives
    Red Peppers
    Daiya Cheese
    Cashew Cream (Sour Cream)
    Creamy Avocado Dressing
    A glob of spicy salsa
    Walnut Taco Meat

    If I'm really looking to make it a more filling meal or add more veg protein I toss in FF refried beans or some canned black beans.
