Interesting Main Course Salads w/o Meat

Looking for a good one that I would enjoy perhaps twice a week.
Any suggestions, much appreciated.

    Just had beet and goat cheese tonight - one of my favorites. Pretty filling (but I like beets).

    Kale and Roasted Chickpea Salad

    Ingredients:
    ½ cup chickpeas
    1 Tbsp olive oil
    1 Tbsp lemon juice
    2-4 carrots, shredded.
    8-10 kale leaves

    Directions:
    Toss the chickpeas in the lemon juice and olive oil. Place the chickpeas on a baking sheet and bake for 10-15 minutes or until the chickpeas get dark brown around the edges. Let cool before adding to the lettuce.
    Peel and shred carrots, set aside.
    Wash and chop the kale. Place dry kale on the plate, followed by the roasted chickpeas and the shredded carrots then add your favorite salad dressing.

    Works wonderfully with romaine lettuce or other roasted veggies, I love to roast peppers and onions with the chickpeas!

    Crumbled feta
    Green pesto
    Olive oil



    Spinach
    Strawberries
    Brie
    Poppyseed dressing



    Couscous
    Falafel
    Roasted peppers and cherry tomatoes
    Chickpeas
    Either a lemon/olive oil dressing or some watered down houmous for a dressing



    Lettuce
    Chopped tomatoes
    Kidney beans
    Corn
    Chopped avocado
    Grated cheese
    Broken tortilla chips
    Some salsa on the side
