My mother found a "42 calorie pumpkin cookie" recipe online. She made them and added a few things (chocolate chips and cream cheese frosting, lol), and they turned out super yummy. However, they ended up being 77 calories. BUT, with some adjustments, I'm going to make these again but at 44 calories. Both recipes below.
Original recipe:
1 C. whole wheat flour
1 C. all purpose flour
1 C. sugar
1 tsp baking powder
1 tsp. baking soda
2 tsp pumpkin spice
1/8 tsp sea salt
1/2 C. unsweetened apple sauce
1 tsp almond or vanilla extract
1 cup canned pumpkin
My mother's additions: 1/2 c. mini chocolate chips and some warmed cream cheese frosting drizzled on top (about 6 Tbs total)
Made 36 small cookies at 77 a piece.
My alterations for next time:
use stevia instead of sugar and cut out the frosting (but keep the chocolate chips). This would make each cookie 44 calories
I think I'll go eat one now.

OOPS...forgot the directions...
preheat to 350. Grease a cookie sheet with cooking spray
cream sugars, applesauce, pumpkin and almond extract together
In another bowl, mix flours, baking soda, baking powder, salt and spice. Once mixed add to the wet stuff
form little blobs and bake for 15-18 minutes or until browned.
They are GOOD! However, as I'm eating them again this morning, I'm wondering if more apple sauce would make them slightly less dry.0 -
