what should i have for dinner? quick, easy, not too expensive, and only for one person!

    soup and salad or soup and half a sandwich.

    scrambled eggs with salsa and grilled zucchini strips. good protein and yummy veggies. (had this on saturday and quite possibly again tonight)

    Grilled cheese and either fruit or veggies as a side or 1/2 can of soup. Or Maybe a salad and crackers. Or soup and crackers.

    I'm having a grilled chicken breast (frozen, from Tyson) and a baked potato with broccoli and a little cheese!

    When I'm in real big hurry and have no time to make anything.....

    I have a bowl of healthy cereal with fruit on top. :happy:
    Those are two things I always have on hand.

    I am a huge fan of Morningstar Grillers (veggie burger) on a whole grain Nature's Own sandwich thin... add a dab of ketchup and mustard, a lettuce leaf or two, some sliced tomato... I will never eat a "real" hamburger again! These are sooooo good and so quick and easy to make in a pinch.

    Add some steam in the bag veggies or if you are a fries or chips kind of person- try Alexia Spicy Sweet Potato fries baked in the oven OR my new "chip" is Sensible Portions Veggie Straws (spinach, tomato, & potato hollowed out straws that resemble french fries but are crunchy like chips).

    Quick, easy, and doesn't tempt me to run through the fast food drive thru!

    mmmm...the baked potato sounds good!
    You can stuff it with all kinds of veggies and a little bit of cheese and butter!

    My favorite quick cheap dinner is a Subway salad!! You can keep it very low cal. I skip the dressing and cheese and just load up on the veggies. You can even do a splash of oil and vinegar and still keep it reasonable. But, honestly, with all of the veggies, I find you don't really need dressing!!!

  • Wendy's small chili. Only .99 and 220 calories. Add some yogurt or fruit for dessert.
  • turkey in a whole wheat pita with cheddar cheese slice red onions and apple.. and a little low fat mayo or greek yogurt.. and carrots and celery on the side... SOOO YUMMY!
  • Tonight I think Im havin a baked potato and a side salad or just a bake potato and add some fixing on top.
  • For dinner tonight I had grilled chicken, new potatoes and broccoli. It was quick and delicious!

    I know this won't help for tonight, but on a free day make up a crockpot of your favorite soup or stew, then freeze it in individual portions for later! Tonight I heated up a previously frozen portion of Darcibean's Creamy Mexican Crockpot Chicken, whipped up some boil in the bag brown rice and had a home cooked meal in 10 minutes!

    However....some nights I toast 2 slices of whole wheat bread, put a tiny amount of mustard on each slice, then mix a can of tuna with about 2 tablespoons of plain nonfat yogurt and some salt and lemon pepper. SUPER yummy and pretty nutritious. I usually eat it along side a sliced, vine ripened tomato!
