That's a tough one...I'm sure some of the Mother's at this site will chime in for you soon...the only thing I can think of at the moment is mashed yams or carrots as a starchy side dish to your protein...I like to boil till tender then mash, you can always sprinkle them with cinnamon for the kids maybe...kids that dont eat vegetables usually still like fruit...if your kids like yogurt they even have dessert flavors these days...one of my girlfriends used to chop vegetables real small and add them to mashed potatoes...the kids will see the vegetables in the potatoes and might refuse but if you insist they try at least one bite they might like it...good luck.
