Need Help Estimating Calories

A woman I work with makes amazing Indian food and sometimes she'll make extra and bring me some. She's so sweet and I can't not take it, but if possible, I'd like to estimate what she made so I can make adjustments to my activities and other foods for that day.
So far, I know the dish has beef, some onions, carrots and then a sauce (and I can tell it's a bit oily), and all of that is served over rice.
If I count what I can (beef, veggies, rice) and eliminate eating as much of the sauce as I can, how many extra 'quick add calories' should I add to accurately predict how much I ate? Any ideas?

I think that's a great idea. She will be flattered that you'd like to try on your own and you will have a guideline!0
