slow cooker recipe for pork shoulder anyone?

Hi,

I've got a pork shoulder joint and wondered if anyone had any delicious recipes to make it stretch over a few meals? Always wanted to give bbq pulled pork a go if anyone has a recipe for that?

    This one calls for a pork loin, but you can sub in the pork shoulder, just make sure you recalculate the calories and macros to reflect what you sub in. Also note, this isn't a saucy recipe, if you want it more saucy then just up the amount of liquids you put in.

    Mmmmm...pork shoulder. Luscious pork shoulder...I better stop.

    So, I usually smoke pork shoulder, but if you want to do one in the slow cooker, try this:

    Stab the meat with a narrow knife and fill the holes with a paste made of garlic, lemon peel, salt, and pepper. I'm very generous with the amount since I love garlic and lemon, but you can balance it to your taste. If you like herbs, feel free to add thyme or sage.

    Put it in the slow cooker (spray or coat the bottom of the slow cooker with a very thin coating of oil) and let it do it's thing on low for 8-10 hours. When you are done, you'll be amazed at how much fat has melted off of the meat. Strain it and separate out the fat from the luscious juices, Shred the pork with 2 forks, pour the juices (minus the fat) over the top, and enjoy. If you are as fussy as I am, I have to pull the pork by hand in order to find any remaining pockets of fat to discard.

    This is fantastic over salad. I often serve it over steamed vegetables. I'm diabetic so I pass on the carbs, but I'll sometimes make rice for the family to enjoy it over, or give them rolls to make sandwiches.

    For a more traditional barbecued pork flavor, rub the entire shoulder joint with a pork dry rub. Bad Byron's Butt Rub is a decent commercial one, then into the crockpot and follow the rest of the directions above.

    I have used this cooked meat with corn tortillas, on a salad, on a bun and just by itself.
