77 cal per cup SOUP- very good.

My mother just whipped this up today and luckily I asked her to jot down what she puts in it so that I can record the calories for today. Well it turned out the soup was amazing. I didn't record it until after I ate a couple bowls and I was very pleasantly surprised to see it was only 77 calories a cup! It reminds me of the Panera cheesey broccoli soup but with less cheesiness. There are a lot of ingredients, but it's worth it. This makes quite a bit. It's great reheated! I just had some for dinner again. I'll be eating this for lunch all week 
“Mom’s Diet Soup”
10 C. water
1 ½ C. diced carrots
1 ½ C. chopped onion
2 C. diced celery
1 tsp. minced garlic
½ tsp. nutmeg
2 T. instant chicken bouillon
½ tsp. coarse ground pepper
1- 14.4 oz bag frozen broccoli (~4.5 cups)
2 cups frozen O’brien hashbrowns
1 pkg spinach dip seasoning mix (0.62oz)
2 C. angel hair cole slaw
2 tsp salt
1 tsp seasoning salt
1/8 tsp thyme
(boil above veggies until soft- approx. 15 min)
½ C. cornstarch mixed with 1 C. water. Simmer for 5-10 minutes and then add ¾ C. shredded Colby jack cheese. Then mix it in the veggies and simmer for 5-10 minutes
Optional: cauliflower, zucchini, or any other veggies! (get rid of the hashbrowns for an even lower calorie soup)
This makes 16- 1cup servings at 77 calories each.
