Healthier mac and cheese recipe?

I've never been able to make a good one anyway, so might as well ask, lol. Is there such thing as a tasty and easy mac and cheese recipe? Hubby has been asking...

    I use wheat pasta and laughing Cow cheese wedges and a dash of seal salt. I also add spinach into it so its extra yummy :)
    I take the LC cheese wedges out and warm them in my hands while the pasta is cooking since straight from the fridge leaves them too cold to melt properly.
    Also, Quest makes a "unique" low carb spinach pasta. Its decent but the texture is different and takes getting used to.
    Thank fully I'm not a big pasta fan.

    Here's my recipe for vegan mac and cheese feel free to use regular cheese, milk, and butter and whatever fat% you like of them.
    1/2 pound pasta (elbows)

    Melt 1/4 cup of Earth Balance Vegan Butter and whisk with 1/4 flour. Add a sprinkle of dry mustard, and paprika.
    Mix in 2 cups of Rice Milk.
    Whisk.
    Add in one bag of Daiya cheese (Cheddar) Save a handful for topping.
    Whisk.
    Fold into baking dish the elbows and cheese sauce.
    Top with extra cheese, and breadcrumbs.
    Bake for 10 minutes at 350F then broil til the top is brown.

    I love this one from Cooking Light! Easy and sinfully delicious. I make it without the breadcrumbs, and mix a tablespoon of Smart Balance into the cheese sauce. You can try different kinds of cheese too, I made it with 3 kinds when I didn't have enough cheddar.
