High Protein Scrambled Egg Recipe

A few months ago I saw a co-worker do this. I've been doing it for one of my morning meals every day. It is easy and tasty!
You take eggs and mix in some cottage cheese, then microwave it for a couple minutes. That's it!
Here is what I do:
Crack 3 whole eggs in a bowl.
Add 1/2 cup of cattage cheese
Mix well
Microwave for 45 sec.
Stir
Microwave for 45 sec.
Stir
Microwave for 30 Sec
Stir and let sit for a couple minutes
Enjoy!
NOTE: Each microwave is different, so time might take some trial and error in cooking the eggs without them exploding...you'll know what I mean if and when it happens or if has happened to you before.
The cottage cheese melts leaving the eggs fluffy and yummy. You don't have the texture of the cottage cheese and you don't really taste the cottage cheese. With this meal you get:
313 Cals
31 Grams Protein
7 grams Carbs
18 Grams Fat
I personally try to get in ~30 grams of protein in per meal, so I use three eggs. However, you could only use two eggs and 1/4 cup cottage cheese. That's if you don't need as much protein and you need to hit lower cals.

Adding cottage cheese to eggs sounds tasty. I would make mine on the stove top, though. Microwaved eggs just doesn't sound all that appealing.0

Yeah, I would blend this up and try it on the stove. I make eggs with feta a lot, super delish! With a little spinach and sun dried tomatoes. mm! I will have to swap the feta for cottage cheese to test 'er out. Thanks for the idea!0

I've done that before too and while it tasted fine, I felt like I got cheated out of food. I don't mind the taste of cottage cheese (the no salt added kind) so I would rather just eat eggs and then cottage cheese. That way for the same amount of calories, I get the satisfaction of eating two things instead of just one.0

Does this make it like scrambled eggs then? I never thought about trying to make eggs in the microwave, but a microwave and toaster over are my only kitchen right now...
it does a decent job....think of it like the egg patty at dunks. is it as good as in a frying pan? nah, but for the convenience it's damn good.
this seems like a good idea OP! my mom used to put cream cheese in our scrambled eggs and it was bomb (i know it may sound nutty, but it was goood!)
if youre a meat eater, this is also a great way to take care of any and all leftover meat you might have kickin around in the fridge...the new years ham remnants, whats left of last nights steak....0 -

not as sad as cauliflower hot "wings" though, but yeah just the whites are sad too

It's fantastic! I sautee a little bit of spinach, add 2 eggs, 1tbs of cottage cheese and scramble it all together. It's what I've had for the past 2 mornings.0 -
My mom used make this for my sister and I when we were sick--I had completely forgotten about it! Yum...so good!0

Diced pepperoni, put it int he food processor, took half of it and rendered the fat and crisped it up and took the rendered fat, crispy and uncrispy pepperoni and folded it in with softened cream cheese0 -

I use whole eggs. By getting rid of the yolks, your throwing out a lot of healthy micro nutrients, plus a portion of the protein. Also, more recent research that I've read is showing that eating cholesterol and saturated fat does NOT raise cholesterol levels in the blood.0 -

I like cottage cheese in things (like lasagna) more than by itself, so this would be great for me! Some spinach and or mushrooms if I have time would be good too...

P.s. I eat about 40% fat, much of it saturated animal fat and I have really good blood work. An egg is one of the most complete forms of protein and should never be half wasted by throwing out the yolk.0 -
