I need ideas for this particular lunch

My dad is making pizza today for lunch and my whole family is eating that today, but I don't want to.
The healthy stuff that I currently have in my fridge is:
a carrot
red cabbage
tomatoes
tomato juice
eggs
potatoes
cauliflower
string beans
some kind of low cal young cheese
half of a leek
onions
apples

Does anybody have any idea what I can make with that and how?

  • Bake a potato. Grate your carrot and onion and sauté in some olive oil...maybe a little salt. After carrot and onion are lightly sautéed add some diced tomatoes and scramble in an egg to create what I call a scramblet. Cut the potato in half and lay the scramblet in the middle. Might drizzle a little olive oil on top of it all.

    Fritata - cook and slice a few potatoes,put with sliced onion and tomatoes in frying pan with spray oil or 1 tbsp max olive oil, cook till veggies are soft then pour in beaten eggs. Cook till eggs are set, if necessary brown top under grill. Serve with your green beans.

    Bloody Mary with the Tomato Juice, using carrot or leek instead of celery. (You better be bulking to down one of those...)

    Scramble eggs and diced potato with a bit of onion if you like.

    Possibly eat before dinner and then enjoy a small slice of the pizza with the family. As long as it fits your macros and calories goals.
