gluten free pescetarian student meals?

im a student in the uk with a gluten allergy, do you guys have suggestions for cheap, fast meals that i can make? my favourite thing to eat is pisto, which is like spanish ratatouille:


- olive oil
- 1/2 red onion
- 1 clove of garlic
- as much aubergine, courgette, red pepper, green pepper and carrot you want
- 1/2 cup of tomato sauce
- salt, pepper and paprika
- 1 or 2 eggs (depending on how hungry you are)
- 3/4 cup of cooked brown rice

basically sautee the vegetables with the paprika, salt and pepper, and then put onto a low heat when you add the tomato sauce. after the vegetables are cooked, put it back onto high heat and crack the eggs on top of the vegetables until cooked. serve on top of warm brown rice. i love it because its so tasty and takes about 15 minutes to make.

    I love to make chickpea, spinach and sweet potato curry. Quantities generally vary, but it always contains the following:

    Oil
    Onion (preferably red, but white are cheaper if you're on a student budget)
    Chickpeas
    Spinach
    Sweet Potato
    Spinach
    Fresh tomatoes
    Curry paste

    I usually have this with a salmon fillet, but obviously it would be cheaper without.
