I cooked WAY too much quinoa...ideas?

Anyone have any recipes using already cooked quinoa? I cookedit with veggie broth, so it has a savoryflavor to it.

Hmmm....try mixing some veggies in. Something that crunches a little, for contrast, perhaps.0

Add tomato, cucumber, onion, chickpeas lots of cilantro ( or parsley) and a nice red wine vinaigrette. Chill and yum0

When I have extra quinoa I put waxed paper on a cookie sheet and spread out the quinoa in one layer. Then I put it in the freezer. Once it's frozen I put it in a freezer bag. It only takes about a minute in the microwave to thaw out when you need it!0

Freeze it and toss it in soups or stir fry/sauté's as desired. Ideas above are awesome.0

Add some cooked broccoli and cheddar cheese. Yum!0

mix it with tuna, sriracha, salsa mayo whatever and make a tuna salad out of it.. that's what I do.0

Make some chicken or shrimp or ham fried quinoa. Same as you would make fried rice.

You can pretty much mix with anything or freeze it. Its easy to make too much0

I have quinoa for breakfast about four mornings a week. The Digest Diet has a great "Creamy Quinoa" recipe with non-fat evaporated milk, honey, and flax seed.0

I made this for dinner tonight and I am still amazed at how rediculously delicious and low calorie it was for the amount I had in the bowl.
I did a "quick" half version of it with already cooked beans and it still made 5 meals worth the food. Toss the already cooked quinoa in right at the very end0 -
Thanks everyone for the fantastic ideas! I can't wait to try them all out. I never knew I could freeze it already cooked!
I ended up eating cold cooked quinoa with lemon juice, feta, tomatoes, cukes, red onions, and red peppers for lunch today, basically following skinnytaste's mediterranean quinoa salad. It was amazing! Mmm... Quinoa is new to me, but I love it!

I have made salads out of quinoa, added quinoa to a spinach salad, cooked it with veggies, and the best was this week.
I sautéed spinach and added quinoa with soy sauce. Almost like fried rice but with quinoa0 -
Yeah I freeze mine in 1/2 cup servings and it's handy for nights I am stuck for ideas or need to add cals to a meal.
