Anyone have any good healthy chicken recipes?

That's what I was just looking for too. I need some new ideas other then topped with a few bread crumbs and baked or crock pot with cream of chicken soup.0

Forgot. You can also add water or chicken broth. Toss in some corn, beans and green chilis to make a soup.0 -
My favorite quick way is just on the grill/stove top with some olive oil, salt, pepper, and oregano. Mrs Dash also makes some great seasonings.
I also love it mixed w/ some diced tomatoes and a little shredded cheese on top.
This past weekend we cooked ours in the oven with olive oil, lemon, salt, pepper, and rosemary.0 -
Herb Grilled Chicken
- finely chop some sage, thyme, parsley, garlic, lemon zest
- add a little olive oil, lemon juice and salt
- pound chicken 1/4" thick and marinate for at least 1 hour
- grill for about 2 min/side0 -
We tried this last night--pretty good!
Honey Mustard Chicken
(I made in the crock pot but it could be baked as well)
1 lb. b/s chicken breast
1/4 cup honey
2-3 tbsp. Dijon mustard depending how strong you like the flavor
1 tsp. minced garlic
1/4 tsp. pepper
1 small onion, sliced
Brown rice, if desired
Spray crock pot with pam. Lay onions in pot and place chicken on top. Combine remaining ingredients and pour over chicken. Cook on low for 4-6 hours. Break into smaller pieces, stir and serve over brown rice.0 -
We had Sweet and Sour Chicken tonight for dinner. I don't eat wheat and I try to stick to under 1600 cal a day so I wanted to try to keep it low and healthy:
2 boneless/skinless chicken breasts cut into bit size pieces
1/4 - 1/2 cup of Egg Beaters
1/2 cup of Gluten Free Bread Crumbs
I can chunk pineapple in juice (no sugar added) (drain but save the juice)
2 tbsp. brown sugar
2 tbsp. Rice vinegar
1/2 cup low sodium chicken broth
1-2 peppers (color of your choice)
1 onion
Dip chicken pieces in Egg Beater and dredge in crumbs. Coat fry pan with PAM and fry chicken until crispy and cooked. Place in baking dish (I used a lasagna type pan) along with drained pineapple chunks. Sauté peppers and onions in pan until mostly done. Add to chicken in baking dish. Mix brown sugar, pineapple juice, chicken broth and vinegar and pour over chicken/pepper mixture. Bake at 325 for 30-40 minutes until thoroughly cooked.
It is quite yummy and pretty low in calories, plus no wheat!!! Yay!0
