Homemade sauerkraut and kimchi recipes?

I just set up my very first homemade sauerkraut, and am also interested in trying my hands at kimchi.

Any favorite recipes and techniques out there?

    We don't make either of these, but we do make kombucha. If you ever get the hankering to try your hand at that, I'll be glad to pass on what few pointers I have!

    I make my own kimchi. I love it! I eat it with quinoa and drizzle it with sesame oil.
    I use this recipe:

    however, I cut the napa cabbage into pieces, salt it with alot of kosher salt, let it sit for a few hours, then wash it thoroughly- fill up the big bowl that has the cabbage with water and then drain it at least three times.
    Then mix in the sauce.

    I made kimchi with regular cabbage once but it was not nearly as good.

    The only problem with kimchi I found is that it gives me very stinky gas! So don't eat it before a special event or date or something like that!

    I have heard it makes a great probiotic.
