Lunch and Dinner

What are some easy things to make for lunch and dinner? I never seem to take in enough calories and when I do I'm always over in sugar and sodium for the day.

    Eat whatever you like.

    Log the food, look at the calories, eat more or less accordingly.

    To get more calories, use full-fat cheeses, milk, nuts, avocado, oils, etc.

    And unless you have a medical reason to monitor them, don't worry about your sugar and sodium levels.

    I find it's easier when eating protein with sides of veggies.
    Chicken, beef, fish + veggies prepared how you like (I enjoy roasted veggies).

    I basically eat whatever I like within reason, and weigh/log everything.

    I also cook a lot which helps me track exactly what im eating, and allows me to make healthier versions of my favourite foods like curries, chillis, stews, pasta etc. Lunches are usually (homemade) soup, sandwich or a salad with fruit then a proper dinner like curry and rice, coq au vin, pasta etc. If I get hungry between meals I will eat fruit or a boiled egg, maybe an ounce of nuts or a tablespoon of peanut butter.

    Invest in a good scale and to increase your cals whenever you are a lot under, avocados and nuts are great. When you cook, cook in bulk and freeze some so that you always have a proper healthy meal at hand when you are too busy to cook.

    My dinners are usually pretty basic. Meat (chicken, pork, beef sometimes fish) and vegetables (either a salad or steamed). Lunch can be anything. Leftovers from dinner plus the starch I made for the family (rice, spaghetti), or a sandwich with turkey or chicken and lots of veg, or just cottage cheese and green pepper (a summer staple).

    I couldn't care less about sodium and sugar, personally. Unless you're diabetic or have high blood pressure, it's not a problem at all... Ignore them.
