Bread > Finely Chopped Basil > Mozzarella > Large Slice Tomato
Cook like a regular grilled cheese sandwich.
Most importantly, wipe drool and enjoy!
There is something about tomatoes, basil and mozzarella that I can't help but love.

Don't know if you know this trick already, but a great way to save calories when making a grilled cheese is to spray your bread with Pam instead of using butter/margarine/other butter alternatives. Makes the bread just as crispy as butter.0

I was going to suggest something similar. You're a good, good person.
Also, you can brush the bread with a little olive oil for a more panini taste.0 -

I also like to make grilled cheese with 1 oz shredded sharp raw (white) cheddar, thin slices of granny smith apple and spinach, with a little dijon mustard. So good!0 -
