I am not a fan of the cauliflower exchange everything recipes. I know, *gasp*! I like cauliflower how it is and do not try to change out my rice and/or mashed potatoes or anything else with cauliflower, because no.

    The only time I find cauliflower tolerable is when it is doused in cheese. Like, cheese with a little bit of cauliflower. Ick.

    I absolutely love love love mixing cauliflower and potatoes for smashed potatoes. I love the flavor, I love the texture, and I love the cut in calories!!! But roasted cauliflower straight up is glorious as well :)

    I eat it raw or roasted. I'm not usually eating mashed potatoes to cut calories. :wink:

    I must confess... I did not like cauliflower until just recently. And to say I 'like' it is generous. I now tolerate it, as long as I don't dwell on what I think it looks like. <shudders>
