Butter substitute...?

I use butter when cooking and baking but I also like to substitute it once in awhile to get a little healthier result (have you ever made boxed brownies with mashed banana instead of oil??! HEAVENLY)

Anyways, I make a creamy potato & ham soup and the cream base calls for 4 tbsp of butter. Is there anything I could use in place of it? Or is this the type of recipe that's best followed as written?

    If you're talking about a cream base, it looks like you're making a roux to thicken the soup. I would try cutting the butter in half before substituting. And if it is a Roux, reduce the amount of flour too.

    That's exactly it, I just never knew it had a name!! I will try halving the flour and butter...there's no need for it to be super ultra thick anyways! Thank you!

    I use lard quiet a bit- mostly bacon fat renderings.
