Quinoa recipes??

Hi everyone!
I like quinoa, but it can be pretty boring, do you have a tasty recipe to share?

    Scramble a few eggs/egg whites, when it's still liquid but almost cooked add the cooked quinoa and keep cooking until all the liquid is absorbed and the eggs are coating each kernel or quinoa. Add some salsa. :)

    You can throw almost anything into it. I always start with a little olive oil and diced shallot until soft, toast quinoa and then adding the veggie broth. My "go to" is a handful of dried cranberries and sliced almonds at the finish. I have done figs that were great, like risotto you can add anything - roasted veggies like butternut squash, etc.

    Ingredients
    2 3/4 cups low-sodium chicken stock
    1/4 cup fresh lemon juice
    1 1/2 cups quinoa
    Dressing:

    1/4 cup extra-virgin olive oil
    1/4 cup fresh lemon juice
    3/4 cup chopped fresh basil leaves
    1/4 cup chopped fresh parsley leaves
    1 tablespoon chopped fresh thyme leaves
    2 teaspoons lemon zest
    Kosher salt and freshly ground black pepper
    For the quinoa: In a medium saucepan, add the chicken stock, lemon juice and quinoa. Bring to a boil over medium-high heat. Reduce the heat to a simmer, cover the pan and cook until all the liquid is absorbed, about 12 to 15 minutes.

    For the dressing: In a small bowl, mix together the olive oil, lemon juice, basil, parsley, thyme, and lemon zest. Season with salt and pepper, to taste.

    Pour the dressing over the quinoa and toss until all the ingredients are coated. Transfer the quinoa to a bowl. Season with salt and pepper, to taste, and serve.

    I've added chicken and lightly steamed spinach with just a bit of olive oil, vinegar, salt, pepper and garlic.

    I love it with salmon...it's also good in stir fry with peppers and chicken yummmmm :)

    1 diced mango
    1 diced red pepper
    1 cup diced green onion
    2 cups cooked quinoa
    1 cup chopped cilantro (fresh is better, use much less if dried)
    1 can black beans drained and rinsed (tastes good without the beans too)
    2 tbsp red wine vinegar
    2 tbsp canola oil (can use less if you want)

    Yum.

    My best experience involved a bowl of warm quinoa covered with almond milk, banana, cinnamon, dates, strawberries, blueberries, raisins, and maple syrup.

    I make this recipe every 2 or 3 days and I have my whole family hooked on it (and they do not like to eat healthy one bit)

    Get a container of the already cut up onion and peppers cut up ( you can find it in the produce section of the market)
    2 cups of quinoa
    2 cups of chicken broth or stock and 2 cups of water.
    two handfuls of baby spinach
    a pack of pre cut mushrooms ( i loke the mixed ones)
    1 table spoon of olive oil

    Saute your onions and peppers in the oil and when they turn color add your salt and pepper
    throw in your quino, saute to brown a little then add your liquid
    let boil and cover to simmer for 15 minutes
    half way through throw in your mushrooms and stir and keep it covered till done (i always cook my quinoa 20 minutes from start to finish)
    when your quinoa is cooked, add your baby spinach to the bottom of your serving dish and then add the quinoa on top and just toss. the spinach will wilt from the steam. Enjoy!!!

    Ok I tried another recipe last night ... goes a little like this

    1 tsp oil in medium pan (one that has a cover for it ;... to come later)
    Saute 1 med onion for 2 minutes in oil
    Add 1 cup of quinoa - until toasted - keep stirring - 5 minutes
    Add 2 cups of Chicken Broth and 1 tsp of Curry Power
    (I added chick peas)
    Cover at low simmer heat for 25 minutes

    Curried quinoa ! So AMAZING! had it last night for dinner

    Quinoa cooked with the v8 butternut squash soup or tomato sauce mixed with water. Recently I did this and added onions, garlic, chick peas. Mixed that together and topped the quinoa with arugula, parmesan, cucumber and dice tomato. Topped with a little pamesan and balsamic reduction

    I like to cook it with chicken broth, plain and simple, but my next plan is to use it as fillers instead of bread crumbs in recipes.

    crumbled feta
    It's a great tuna salad for hot weather!
