Mug Pancakes via aubernutter.tumblr.com (Do not remove this!! I want credit given where it is due!)
Ingredients:
1 banana
1/2 cup oats (any, I used rolled oats)
1 egg, or 2 egg whites
1/4 cup cottage cheese (I did not have any so I used applesauce, came out great)
Cinnamon
1 packet truvia/splenda/etc (optional)
Mix-ins, if you want them
Topping, if you want any
Directions:
Heat banana up in microwave for 30 seconds. You can either do this as a whole banana or do what I did and cut it into chunks in the mug. Mash up the banana in the mug. Take 1/2 cup of oats and put through a blender until they have the consistency of flour, only took a few pulses for mine to get perfect. Mix oats with banana in mug. Add egg into mug and mix thoroughly. Add 1/2 cup of applesauce, or whatnot, into mug and mix. Add cinnamon, however much you want, and sweetener (I did not), if you use it, into mug and mix. At this point, I added in 1 serving of semi-sweet chocolate chips, but I've seen people add in raisins or dried cranberries. Pretty much anything you can think of that will hold up in the microwave. Heat in the microwave anywhere from 2:30-3:30. Mine took 3:30 because of my lower wattage microwave. It will start to rise out of the mug a little while cooking, this is normal. You will be able to tell once it's done, it will be pretty liquidy until complete. Dump out of cup and cut into 1/3rds, I topped mine with 2 TBSP of peanut butter for some extra protein, some do syrup or jelly but the creator uses butter.
It's delicious and quite healthy!

bump - looks yummy. I'm making buffalo cauliflower to go with my wings tomorrow. Just roast cauliflower and make a sauce with Franks hot sauce (or your favorite) and a little melted butter (just for taste) pour it over the cauliflower and roast it a little longer.0
