German Pancake Cups (a.k.a Hootenannies)

1 cup milk
6 eggs
1 cup flour
1/2 tsp. salt
1 tsp. vanilla
1/4 cup butter, melted
Preheat oven to 400 degrees F.
Blend first five ingredients in a blender. Be careful to see that any flour clumps get well-blended.
Blend in butter a little at a time in order to temper the eggs.
Grease muffin tins well and distribute batter evenly between 24 tins, or as many as you get. Fill each about 2/3 full.
Bake for 15 minutes, or until puffy and golden on top.
Pancakes will hollow in center and you can fill with whatever you want.

thank you for posting a real food recipe and not one of those ridiculous derpy MFP recipes where everything is replaced with cauliflower or frozen mashed bananas!

We have something at our house called ebelskivers which is essentially the same thing except the top is covered. And you get to choose your filling. Heaven on a plate!
